C is for COOKIE! That's good enough for me!


Recipes for my favorite cookies ...

Chocolate Chip Cookies
1/2 cup butter, softened
1/2 cup shortening or vegetable oil
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla
2 3/4 cups all-purpose flour
1 12-ounce package of semisweet chocolate chips

1) Preheat oven to 375.  In a large mixing bowl beat butter and shortening with an electric mixer.  Add the brown sugar, granulated sugar, baking soda, and salt.  Beat until mixture is combined.  Beat in eggs and vanilla until combined.  Beat in as much of the flour as you can with the mixer.  Stir in any remaining flour.  Stir in chocolate chips.
2) Drop dough on ungreased cookie sheets and bake for 8-9 minutes or until edges are just light brown.  Cool on cookie sheet for 2 minutes.  Transfer to wire rack and let cool.

Oatmeal Chocolate Chip Cookies
Grind 2/12 cups of oatmeal in a blender.
In a bowl, cream: 1 cup butter, 1 cup brown sugar, 1 cup white sugar
Add: 2 eggs, 2 teaspoons vanilla.  Mix together.
Add: 2 1/2 cups oatmeal, 2 cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt.
Mix.  Add chocolate chips.
Bake @ 350 degrees for 8-11 minutes.

No-Bake Cookies - or as I like to call them, Gorilla Poops
2 cups sugar
1/2 cup milk
1/2 cup cocoa
pinch of salt
1/2 cup butter
1 cup peanut butter
3 cup quick oats
Combine the sugar, milk, cocoa, salt, and butter - mix & bring to a boil.
Cover for 30 seconds.
Stir and boil for 1 minute.
Remove from heat.  Add a teaspoon of vanilla.  Stir in peanut butter.  Add oats.
Let it stand about 10 minutes before forming the small round cookies.
